  1. On the fire, add water and 1 tbsp vinegar and leave it until it boils, then stir it in a circular motion using a hand whisk.
  2. Add the eggs in a bowl.Then add it quickly to the water, you can choose the degree of doneness.. fully cooked 10 minutes.
  3. In a bowl, add egg yolks, cooking cream, 1 tbsp vinegar, lemon juice, butter, water and mix.

    You can add yellow food coloring if you like.

  4. Then add it to the pot or pan on the fire and mix quickly without stopping for one minute.
  5. Avocado mixture: Mix by hand mashed avocado, salt, black pepper, paprika, lemon juice.
  6. Use croissant.
  7. Add the avocado.
  8. Add the eggs.
  9. Add the sauce.
  10. Decorate it with grated parmesan, Italian spices and crushed paprika.
